Snack Time

It’s often a challenge to come up with wholesome snacks that don’t break the bank and still end up in the kids tummies. On Monday, we made these delicious, sugar-absent, low-fat Parfaits for our snack after school.

First we whipped one package (or 250g) of cream cheese until smooth. Next, slowly add 1 1/2 cups of cold milk and keep whipping until creamy. Add 1 package of vanilla pudding. It doesn’t matter which brand, just be sure it’s instant. We found a sugar-free one to use. Whip it again. Finally add 1 cup of dessert topping (aka Cool Whip) and whisk or whip into a creamy frenzy!

This was when the fun really began. Each child had their own task in the process. While two were whipping up our “cheesecake”, the others were cleaning, cutting and mixing berries or breaking up Nilla wafers.

We have special parfait glasses but they aren’t essential. We put a spoon or two of berries in the bottom, then added a clutch of the Nilla wafers and finally the “cheesecake” cream. We kept layering till our cup was full and topped it with a dollop of Cool Whip and a berry.

Yum yum!!
